American Pancake Recipe

 

Serves: 4-6

Ingredients

  • 1 cup plain flour
  • 1 egg, beaten
  • 1 cup cold milk
  • 2 tsp baking powder
  • pinch of salt and cinnamon
  • 1tsp sugar
  • 1tbsp melted butter
  • oil for frying

Combine all the dry ingredients in a bowl (sifting the flour if possible) then add milk, butter and egg and mix well, until you have a smooth batter. Leave the batter stand for a few minutes.

Heat a non stick frying pan making sure the pan is completely hot before adding a little bit of oil, then pour a small ladle of pancake mixture into the pan - you should be able to fit 2 pancakes as the American pancakes should be small and thick. Wait until the top of the pancakes begins to bubble before turning on the other side. Pancakes are ready when both sides have light brown colour.

Keep the pancake warm piled on a preheated plate and covered with foil. Repeat until remaining batter has been used up.

Best served are with maple syrup and chopped pecan nuts.
