Ingredients
Sift all the flour into a large bowl, add egg and mix together slowly adding the milk. Keep thoroughly stirring and adding milk until the mixture is smooth. Add sugar and salt at the end and give it a one last mix. At the end you should have a very liquid like batter.
Heat a small non stick frying pan making sure the pan is completely hot before adding a few drops of oil, then using a medium size ladle pour in the pancake mixture tilting the pan around so the base is completely covered, but not too thickly.
Cook the pancake on one side for about 1-2 mins, the trick is to wait until the pancake doesn't look wet anymore, then by loosing the edges flip on the other side and cook for another minute or two.
Keep the pancake warm piled on a preheated plate and covered with foil. Repeat with remaining butter.
I like mine pancake served with jam spreaded over and folded into triangle. Then adding some melted chocolate over the top and finishing off with whipped cream.
